I am writing to share an important update on our family business. As most of you know I spent last week in Florida with my parents and little Angel Maria Luisa. It was such an amazing time spending every waking moment with the baby. It has been many months since I have been able to spend that much time with her and it made me realize that I’m spreading myself a bit thin. I’m truly Blessed to be able to have my own business which allows me to make my own schedule to accommodate raising the baby, but lately I have found that my schedule is packed and she is going back and forth to my sister and mother. I don’t want to miss out on this precious time so I have decided to temporarily remove our weekly food orders from our services. This will relieve about 30 hours of planning, shopping, and prepping from my week. I believe in the near future we will have a bigger facility and a larger staff, but until then some things will be put on hold. I will still be teaching classes, doing private chef services, and of course personal training. You can also purchase many of our food items at Good 'n Raw in Lakewood for the time being. I encourage each of you to challenge yourself to making more and more of your own raw foods. I can support you in two ways… 1) follow me on my blog for fun, easy recipes that taste spectacular, and 2) join me for a class… Next Wednesday, February 15th is a perfect opportunity. We are having a Hands-on Demonstration at Home Appliance Showroom in Brunswick. We cover a lot of recipes in this class and it will be a lot of fun. This is the first time we are doing a Hands-on class because we think it will really help propel you to a new level in caring for yourself! As thanks for the continue support and in celebration of Valentine's Day, I would like to share this recipe with you: Pomegranate Cheesecake Crust: 2 cups almonds ¼ cup dates ¼ t. Vanilla 1/8 t. Sea salt
  1. Add all ingredients to the food processor, adding dates slowly
  2. The crust should be a mixture that can hold together with gentle pressure.
  3. Press the mixture into the bottom of a spring form pan
Filling: 3 cups soaked cashews 2 ¼ cups pomegranate juice ¼ cup lemon juice ¾ cup maple syrup 1 T. Vanilla ¼ t. Sea salt ¾ cup coconut butter splash of beet juice (optional for color)
  1. Blend all ingredients except the coconut butter in the Vitamix.
  2. Next add the coconut butter and continue to blend until smooth.
  3. Poor mixture over crust and allow to set for several hours or overnight.
Remove the spring form pan, slice and garnish with pomegranate seeds
