What is Kombucha? According to Wikipedia... Kombucha is an effervescent fermentation of sweetened tea that is used as a functional food. Sometimes referred to as a "mushroom" or "mother", the kombucha culture is actually a symbiotic colony of bacteria and yeast (SCOBY).
