Healthy Gluten Free Veggie Wrap with my favorite dressing, Honey Mustard... Dressing:
1 cup olive oil 1/3 cup honey 1/4 cup mustard, coarse mixed with Dijon 1/4 cup apple cider vinegar... 2 tbsp. lemon juice 1 clove garlic Wraps:
2 large collard leaves 2 cups mixed greens or sprouts 1 avocado, sliced 1/2 cup red bell pepper, chopped 1/2 cup cucumber, chopped 1/2 cup carrot, shredded Honey mustard dressing to taste Place all ingredients in a collard and wrap like a burrito!

I must say I'm feeling kind of bad lately that my blog recipes have been a bit scarce. With a 2.5 and 1 year old sometimes it's easier just to post to Facebook!
