3 zucchinis or 2 sweet potatoes, spiralized 2 cups bean sprouts 3/4 C. chopped almonds or cashew 1 red or yellow bell pepper, sliced 4 green onions, diced Place all above ingredients in a bowl
1 cup coconut milk 1/2 cup almond butter 1 T. minced fresh ginger 2 T. Aminos 2 T. lime juice 1 t. minced garlic 2 dates 1/8 t. cayenne
- Blend until you have a smooth Pad Thai sauce.
- Pour Pad Thai sauce on the vegetables and sprouts until well coated.
- Garnish with sesame seeds and a slice of lime
