For the love of cheese

One of the most common foods people tell me they miss on a plant-based diet is CHEESE! We also get the most requests on our food orders for our cheesy based dishes like nacho cheese sauce, mac "not" cheese, and fettucini alfredo. Here is a very Basic Spreadable Cashew Cheese recipe.

Basic Cashew Cheese raw cheese

2 cups raw cashews, soaked for  2 – 4 hours 1/4 cup water or more if needed 1/4 cup lemon juice 1/2 cup nutritional yeast 1 garlic clove 1 tsp sea salt
  1. Blend all ingredients in a Vitamix or high-speed blender.
  2. Transfer the cheese to a bowl and chill.

Some ideas for flavoring your cheese...

  • Stir in 1/4 cup fresh finely chopped herbs such as basil, thyme, and parsley
  • Add 1/4 cup of sundried tomatoes to the blender, then stir in 1/4 fresh chopped basil.
