2 medium Eggplants, peeled or 4 Zucchini 1/3 cup olive oil 3 Tbsp maple syrup 3 Tbsp apple cider vinegar 2-3 tsp sea salt 1 tsp paprika 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp Liquid Smoke (not raw) 1/4 tsp cayenne
- Using the mandolin or a peeler, make long slices of the eggplant or zucchini.
- Mix all ingredients in a large bowl and allow to marinate for at least 1 hour.
- Place slices directly onto the screen of your dehydrator sheets.
- Set dehydrator at 145 for 1 hour, then 115 for 12 plus hours
