Pasta and Neatballs

Many people ask me how an Italian like myself can go without some traditional Italian favorites?! Here is one of my favorite recipes for Neatballs that I serve with my Zucchini Pasta Marinara.

Italian Neatballs Recipe meatballs

1 cup soaked barley 1 cup walnuts 1 cup almonds 1 cup red bell pepper 1 cup mushroom 1 stalk celery ½ cup sundried tomatoes ¼ onion, small 2 cloves garlic ½ tsp sea salt ½ cup parsley, chopped ½ cup flaxseed meal (for breading)
  1. In a food processor, process all ingredients except parsley and flaxseed until smooth.
  2. Pulse chop in parsley.
  3. Measure ¼ cup of the mixture and roll into balls and roll over flaxseed “breading”.
  4. Place on mesh dehydrator screens for 8 hours on 110°F.
