Italian Neatballs Recipe
1 cup soaked barley 1 cup walnuts 1 cup almonds 1 cup red bell pepper 1 cup mushroom 1 stalk celery ½ cup sundried tomatoes ¼ onion, small 2 cloves garlic ½ tsp sea salt ½ cup parsley, chopped ½ cup flaxseed meal (for breading)
- In a food processor, process all ingredients except parsley and flaxseed until smooth.
- Pulse chop in parsley.
- Measure ¼ cup of the mixture and roll into balls and roll over flaxseed “breading”.
- Place on mesh dehydrator screens for 8 hours on 110°F.
