Hearts of Palm are a versatile, tender, white vegetable that are a great substitute for "fish" in many vegan recipes. They are an excellent source of protein, potassium, copper, B6, and zinc!

As the weather starts getting warmer and the sun starts shining bright, impress your friends with this fresh Ceviche recipe...

Hearts of Palm Ceviche

  • 8oz of hearts of palm (you can also substitute with marinated artichokes or steamed white asparagus)
  • 1 cup fresh lime juice
  • 1 small red onion, diced
  • 1 medium tomato, chopped
  • 1/4 cup chopped cilantro
  • 1/2 jalapeño, deseeded and minced
  • 1 Tbsp. olive oil
  • Pink Himalayan sea salt to taste
  • 1 ripe avocado, cubed
    • Marinate the hearts of palm in the lime juice for 15 minutes or more. 
    • Add remaining ingredients, except the avocado and chill for at least one hour. 
    • When you're ready to serve, add avocado.
    • Enjoy as is or with tortilla chips or flax crackers.
